My Early Summer Honey is harvested at the end of the summer season, where I've separated the nectar collected in the early part of summer by the bees from the early summer wildflowers a majority being from the local brambles in full bloom across the Colne Valley region. The result is a light, floral honey with a delicate sweetness that captures the very best of an English summer.
